Pretty much the entire country is dealing with high temps this week, but as a 37-weeks-pregnant lady, I think I have it rough. Thank goodness for air conditioners. And, crock pots! The dinner dilemma arose yesterday and I had been wanting to try this crock pot chicken fajita recipe for awhile now. My folks already had the ingredients on hand. I just had to trek to Wal-Mart (ugh...) for the fixings like cheese and such.
Now, my hometown is "special," so a trip to Wally World, as my family calls it, on the hottest day of the summer so far was sure to be a treat. A lot of interesting people were crowding the aisles in an effort to beat the heat. On my way there, I swear I saw Terrence Trent D'Arby, so you know this song has been stuck in my head ever since. You can thank me later for that awesomeness.
I'll spare you the pictures of me preparing the meal, as the link has great photos to accompany the recipe. It was super easy to follow and the end result was delicious. And the house stayed nice and cool!
